Roasted Chickpea Snack


Winter to me equals warm cozy evenings spent bundled up at home with a movie, a book, a loved one and a good snack. I’m a huge fan of these roasted chickpeas for the flavor, crunch and nutrition they pack in. Make these roasted chickpeas as a popcorn replacement for a snack all on their own or as part of your weekly meal prep to top your favorite salad and winter bowls.

Why Chickpeas?: Chickpeas are a great source of fiber and vegetarian source of protein at 14 grams per cup so you’ll get some sustained energy and satiation from this healthy snack.

Ingredients

  • 1 can chickpeas (drained)

  • 1/2 tsp paprika

  • 1 tsp cumin

  • 1 tsp salt

  • 1.5 tsp olive oil


Instructions

  1. Preheat oven to 400 degrees F

  2. Place drained chickpeas on sheet pan (parchment paper optional, but can make clean up easier)

  3. Sprinkle spices, salt and olive oil over chickpeas

  4. Toss with hands and make sure all chickpeas are coated

  5. Roast for 30-40 minutes until golden brown and crispy. Shake tray after 20 mins and check every 5-10 mins after to make sure they don’t burn.

  6. Let cool and enjoy!
