Baked Tofu

I love a plant-based protein option to top my winter bowls and this baked tofu is one of my go-tos. It’s super easy to put together, and cooks in less than 30 mins for treat I have to portion out for myself so I don’t eat it all at once.

What Kind of Tofu?: Make sure to get the high protein tofu sold at Whole Foods, Trader Joe’s and other grocery stores, as it comes in with 14g of protein per serving, making the protein to fat ratio more optimal for maximizing protein content.
