Cold Cucumber Edamame Salad
This cold cucumber salad only thing I wanted to eat during last week’s heat wave. And it packs a whopping 18g of protein per serving, making it a killer salad base to have on its own or with another protein on top. The best thing about this recipe is it takes less than 5 mins to prepare and just gets better as the flavor get to know each other in the fridge:
Why Cold Salad: Cucumbers are mostly water, so this salad is as hydrating as it is refreshing! You also get the nutritional punch with nearly 20g of protein per serving from the edamame. Perfect on its own or with cold chicken breast on top for even more protein punch!

Ingredients
1 bag of peeled and shelled edamame (frozen and thawed or fresh)
2 English cucumbers sliced thinly
1/2 red onion or 2 shallots sliced thinly
1/4 cup rice wine vinegar
1/4 cup soy sauce
1 tsp sugar
Instructions
Place the cucumbers, edamame, and red onions in a large salad bowl.
Pour vinegar, soy sauce and sugar on top, and combine well with a wooden spoon or with hands, trying to keep the edamame in tact.
Cover and place in the fridge before serving. Enjoy!
