Curry Roasted Edamame
Winter to me equals warm cozy evenings spent bundled up at home with a movie, a book, a loved one and a good snack. I’m a huge fan of these roasted edamame beans for the flavor, crunch and nutrition they pack in. Make these roasted edamame as a popcorn replacement for a snack all on their own or as part of your weekly meal prep to top your favorite salad and winter bowls.
Why Edamame?: Edamame are a great source of fiber and vegetarian source of protein at 17 grams per cup so you’ll get some sustained energy and satiation from this healthy snack.

Vegetarian, Gluten-Free, Dairy-Free, 
Ingredients
- 2 cups cooked edamame beans (thawed and drained, if frozen) 
- 2 tsp curry powder 
- 1 tsp salt 
- 1.5 tsp olive oil 
Instructions
- Preheat oven to 400 degrees F 
- Place drained edamame on sheet pan (parchment paper optional, but can make clean up easier) 
- Sprinkle spices, salt and olive oil over edamame 
- Toss with hands and make sure all beans are coated 
- Roast for 30-40 minutes until golden brown and crispy. Shake tray after 20 mins and check every 5-10 mins after to make sure they don’t burn. 
- Let cool and enjoy!
