Curry Roasted Edamame


Winter to me equals warm cozy evenings spent bundled up at home with a movie, a book, a loved one and a good snack. I’m a huge fan of these roasted edamame beans for the flavor, crunch and nutrition they pack in. Make these roasted edamame as a popcorn replacement for a snack all on their own or as part of your weekly meal prep to top your favorite salad and winter bowls.

Why Edamame?: Edamame are a great source of fiber and vegetarian source of protein at 17 grams per cup so you’ll get some sustained energy and satiation from this healthy snack.

Ingredients

  • 2 cups cooked edamame beans (thawed and drained, if frozen)

  • 2 tsp curry powder

  • 1 tsp salt

  • 1.5 tsp olive oil


Instructions

  1. Preheat oven to 400 degrees F

  2. Place drained edamame on sheet pan (parchment paper optional, but can make clean up easier)

  3. Sprinkle spices, salt and olive oil over edamame

  4. Toss with hands and make sure all beans are coated

  5. Roast for 30-40 minutes until golden brown and crispy. Shake tray after 20 mins and check every 5-10 mins after to make sure they don’t burn.

  6. Let cool and enjoy!
