Sweet and Creamy Broccoli Slaw


This cold summer salad is quick and easy to put together and keeps well in the fridge so it can be ready for your next picnic. Combine the natural crunch of broccoli with sweet raisins and tahini and this side dish is so good it’s going to become your sneaky main.

Cool Tips:

  • Add even more protein with grilled tofu or chicken added

Ingredients

  • 2 heads broccoli including stems, cut into 1/2 inch pieces

  • 2 large carrots shaved

  • 1/4 cup raisins

  • 1 cup edamame

  • 1/4 cup sunflower or pumpkin seeds

  • Dressing:

    • 2 tbsp tahini

    • 1 tbsp balsamic vinegar

    • 1 tbsp dijon mustard

    • pinch of salt

    • about 4 tbsp water


Instructions

  1. Combine all vegetables, raisins, and seeds in bowl and put aside

  2. In a small bowl or jar, combine tahini, balsamic vinegar, mustard and salt and whisk in water slowly until desired texture is achieved

  3. Dress salad and keep in refrigerator for 2 hrs or until serving

  4. Eat within 5 days
