Fully Loaded Watermelon
Summer is here!!!! And food-wise for me that means gobbling up all my favorite fruits while they’re bountiful! First up, juicy, delicious watermelon with my favorite twist. Some of you said you get a weird textural thing from watermelon and it doesn’t necessarily do it for you….hard for me to relate… BUT I’ve even converted those watermelon skeptics with this “Fully Loaded Watermelon” recipe. Just add salt and lime and your watermelon is transformed into a gourmet snack or dessert in seconds.
Cool Tips:
Make it a savory treat by adding feta or goat cheese, mint and olive oil

Ingredients
1 small watermelon
2-3 limes
1/2 teaspoon of kosher or Maldon sea salt
Instructions
Cut watermelon into cubes
How to cut watermelon:
Cut top and bottom of watermelon so you can set it down vertically on a flat base.
Shave rind and white part of the watermelon flesh off in small increments
Cut watermelon meat into 1/2 pieces, then carve them up into 1 inch cubes
Layer 1/2 of watermelon cubes into bowl and squeeze juice of one lime and 1/4 tsp of salt
Repeat with the rest of the watermelon, lime and salt
Toss with a spoon, eat with your hands and enjoy the extra pop of flavor!
