Spanish Tomato Salad


I’m fresh off of a beautiful trip to Spain where I ate the most delicious food, drank incredible wine, and rested and relaxed hard. While seafood was definitely the highlight of our culinary experience, my favorite dish from the entire trip was a simple plate of thick cut tomato slices drizzled with local olive oil, salt, and pickled mediterranean herbs. While I’m sure I’ll never be able to fully recreate the magic of those fresh European ingredients enjoyed seaside, I’ll be trying to for years to come. Hold on to the last of summer’s abundant produce with me with this easy to assemble, satisfying snack or side dish. 

Hot Tips:

  • Use the absolute best olive oil you can find. It makes a huge difference! 

  • Add high quality jarred tuna in olive oil for an equally delish and high protein version

Vegetarian, Gluten-Free


Ingredients

  • 1-2 large heirloom tomatoes 

  • 2 tbsp high quality olive oil 

  • 1 pinch of maldon sea salt 

  • 2 tbsp capers

  • 1/2 tsp oregano

  • Optional: 1 jar of can of high quality tuna filets in oil


Instructions

  1. Cut tomatoes into 1 inch thick (at least) slices and lay on serving platter

  2. Drizzle with olive oil 

  3. Evenly distribute capers, oregano and salt  

  4. Top with optional tuna 

  5. Serve with a crusty bread of your choice and make sure to sponge up all the leftover oil
