My Mom’s Watermelon Salad


I made my mom a cookbook for her birthday this year featuring our favorite recipes of hers and my favorite of all these is her watermelon feta salad. 

The watermelon is so refreshing on a hot summer day and the feta, lime and mint keep it interesting and full of flavor, and add a little protein and fat for slower sugar spikes.

Cool Tips:

  • You can even add a little olive oil, pepper, and arugula to make it into a side salad.

Ingredients

  • 1 small watermelon

  • 2-3 limes

  • 2-3 sprigs of mint

  • 3-4 oz feta cheese

  • 1/2 teaspoon of kosher or Maldon sea salt


Instructions

  1. Cut watermelon into cubes

    1. How to cut watermelon:

      1. Cut top and bottom of watermelon so you can set it down vertically on a flat base.

      2. Shave rind and white part of the watermelon flesh off in small increments

      3. Cut watermelon meat into 1/2 pieces, then carve them up into 1 inch cubes

  2. Mix watermelon, crumbled feta, and torn mint into a bowl

  3. Sprinkle with salt and squeeze lemon juice all over

  4. Toss with hands or spoon and enjoy!
